“Monster Mash 2026” Burrito

We've been working in our lab to create a frightfully delicious burrito! This year's Monster Mash begins on a ghoulish black bean tortilla with smoky chili pepper-cheddar mashed potatoes, light black beans, creamy esquites (street corn), and tangy pickled jalapeños. We add southwest-style chicken thighs, spook-tastic chorizo, grilled poblanos, tri-color sweet potatoes, and grilled red onions. This monster is topped with a sweet-heat crema and served with our terrifying house-fried tortilla chips!
