This week’s special begins on a garlic-pesto tortilla with a hefty scoop of rice, kale-Parmesan white beans, and baby spinach. We add your choice of protein, roasted broccoli, light Sundried tomatoes, rosemary-garlic potatoes, and a zucchini squash blend. We finish this one off with southwest pesto queso and serve it with house-fried tortilla chips.
